I have been extremely hungry lately. Not snacky…more like I could eat an entire Chipotle burrito I’m so hungry! (Those things are enormous– I’ve never seen anyone eat the whole thing!) So, needless to say, I’ve been stepping up my meal game lately.
One of the biggest things I’m REALLY trying to consistently be better at is eating vegetables. Of course they’re nutritious, but they’re also filling. I found the easiest way for me to do this is to trick myself into thinking I’m eating pasta. I spiralize EVERYTHING. Do you have a spiralizer?!! It’s game-changing and makes cooking veggies so much more exciting. I bought this exact spiralizer on Amazon for $30. I can’t say enough good things about it.
And lastly…stir fries are SO easy, so healthy, and so tasty. Slice any leftover meat you may have (or grill/bake some chicken), chop up any leftover veggies you have hanging around, buy a bag of frozen, mixed vegetables, HOMEMAKE your own sauce and wam-bam-thank-you-ma’am, you’ve got a healthy, delicious, home-cooked meal!
These are the recipes on heavy rotation in our house right now.
I used red beets instead of golden beets so it turned all my veggies pink- but this is the biggest variety of raw vegetables that I think I’ve ever eaten! Tangled Thai Salad is going to be a once-a-week meal around here!
