Homemade (Healthier!) General Tso’s Chicken

Wow. Hello Monday. 

I had a super busy weekend. I crave productivity all the time, so this weekend felt oh-so satisfying….especially after being anything but productive for what felt like 2 weeks.

Among other, smaller things Mark and I managed to squeeze in: a workout (Mark got in 2!), a date, a lululemon visit (to exchange a Christmas gift), quality meal planning,  a hectic, whirlwind Costco experience, a trip to Native Sun (health food store similar to Whole Foods) and Publix, putting away the Christmas stuff, doing about 67 loads of laundry, organizing our kitchen cabinets, cleaning out our clothes’ closets, and we both got ahead on some work.  

It must be the whole “fresh start in a new year” thing because I have felt more excited than ever about cooking really amazing, delicious meals. It also helps that I am crazy about my new cookbooks!

For the sake of my excitement, here’s our meal plan for the week:

Sunday nightGather‘s General Tso’s Chicken, steamed broccoli (original recipe from Gather cookbook) (side note: we found the sauce to be a tad bit thick, so I recommend reducing the arrowroot powder to about 1/2 of what the recipe calls for.)

Monday night: Crispy Smashed Chicken (from Nom Nom Paleo), salad

Tuesday night: (Mark cooks!) Smashed Steak Skewers with Cherry BBQ Sauce (Nom Nom Paleo), sweet potato

Wednesday night: Beef stir-fry (we toss flank steak chunks and frozen, stir-fry veggies over a hot stove for something like 10 minutes– then drip some coconut aminos on top. It’s divine…and it only takes all of about 15 minutes to make.)

Thursday night: Leftovers 

Friday night: Shrimp Fried Cauliflower (original recipe from Gather cookbook)

We always have leftovers for lunch and eggs and some sort of meat protein for breakfast (aside from my occasional Overnight Oats-which Mark doesn’t eat) so I love that I really only have to plan for dinner. Easy peasy. 

Last night’s General Tso’s Chicken was INCREDIBLE. Seriously, I wish I could send you all a piece so that you could taste just how like-the-real-thing it really is.

1/2 of a steak burger (I didn’t eat the buns) and I know there are a ton of fries in this pic, but I only ate a small handful then scarfed down my unpictured side salad (I promise!)

Hail merry macaroons

Hail Merry Chocolate Macaroons…as far as “healthy” desserts go, this is about the best one out there!
