PR Book, Sleep, and Banana Ice Cream

Hidey ho! Happy Friday!

I’ve found myself setting some serious weightlifting and fitness goals lately. I wasn’t content just writing these goals down on just any piece of paper– it wasn’t motivating for me at all, in fact, quite the opposite. So, I found Sport Journals’ website and promptly ordered their PR book. I’m in love with it!

There’s space to write your goals, travel WOD ideas, nutrition info, and nice, clean places to note  your PRs. THIS motivates me!

It still baffles me that this time last year, I was afraid to lift a barbell because I thought it would make me big and bulky yet now, I’m pushing myself to life heavier and heavier.  

 

Breakfast:

I’d heard a lot of great stuff about Plant Fusion protein, so I picked up a couple of small packets at our nearby health food store to try it out. I’m not totally in love with the flavor (I bought Cookies N’ Cream) but I don’t hate it…I’m going to keep giving it a go!

Protein smoothie (1/3 of a banana, 1 scoop (packet) of Plant Fusion Protein, 8 oz. of Almond Milk, 4-5 ice cubes)

2 scrambled eggs

about 1/2 Tb. of Kerrygold butter

…then Mark made a spinach and berry smoothie so I had about 2 oz of the batch that he made that would not fit in his cup. YUM!

breakfastLunch:

leftover ground beef and shredded pork (weird combo- I know!)

about 1 Tb. Annie’s Organic Ketchup

about 4 tsp. of yellow mustard

about 1 cup of steamed broccoli with a dash of salt

1/2 of a small, organic Fiji apple sprinkled with cinnamon and dried, unsweetened coconut flakes

 

Snack:

1/2 of an AMRAP Refuel bar

 

Dinner:

I was soooooo sleepy tonight. I laid down to take a power nap and ended up sleeping until 8:30! Mark made himself a tuna salad and was craving sushi. We briefly discussed going out but then decided to postpone a sushi date to a more realistic time tomorrow night.

I was having a crazy sweets craving. I don’t keep many sweets in the house because of my crazy sweet-tooth, so, I had to use what I had. Knowing that I had a large container of un-used frozen bananas in the freezer, I whipped up a batch of “banana ice-cream.” It’s THE BEST!! No dairy, no added sugar and it takes about 5 minutes to make!

Directions: Blend frozen bananas (I used 3) in the blender until they’re creamy and top with whatever you would like! (I also add a little bit of coconut milk to the bananas in the blender and top mine with Enjoy Life chocolate chips)

So my late night dinner consisted of banana ice cream, a Horizon cheestick,cashews, and a glass of water. Not the ideal dinner but exactly what I was craving….sheesh…getting back to my regular eating after vacation has been rough this go round!
